Cha Cha Chicken
1 c. chopped walnuts1/4 c. slivered almonds
1/4 c. shelled sunflower seeds
1/4 c. chopped shelled peanuts
2 T. sesame seeds
2-3 oz. pkg. Ramen noodles, uncooked
1 pkg. Morning Star breaded chicken nuggets or other chicken substitute
1 bag coleslaw mix
1 1/2 c. red seedless grapes, sliced in half
1 1/2 c. celery, sliced thing
1 c. Asian pears, unpeeled
1 12 oz. bottle Brianna's Homestyle Rich Poppy Seed Dressing
Saute the sesame seeds until lightly toasted. Add rest of the nuts and crushed Ramen noodles and continue to toast until all are lightly toasted. Let mixture cool. The Ramen and nut mixture may be made earlier in the day and stored in an airtight container. Mix cubed or sliced chicken nuggets, pears, and nuts with all other ingredients right before serving.
This is a good salad for a light dinner or luncheon. Serve it on a leaf of red cabbage or leaf lettuce.

Curried Chicken Salad with Raisins and Honey
Serves 6
2 cans Worthington Fri-chic, diced
2 medium ribs celery, cut into small dice
2 medium scallions, white and green parts, minced
2 crisp apples, Gala, Fuji or other, diced
2 T minced fresh cilantro leaves or parsley leaves
3/4 - 1 c mayonnaise
1 1/2 - 2 T lemon juice from 1 small lemon
6 T golden raisins
2 t curry powder
1 T honey
Table salt and ground black pepper
Mix all ingredients together in large bowl, including salt and pepper to taste. Serve. (Can be covered and refrigerated overnight.)
